Domaine Carrette Mâcon Solutré-Pouilly, 2023

This is 100% Chardonnay from the commune of Solutré-Pouilly in the Mâcon of Southern Burdundy. The grapes are sourced from a small half-hectare plot on a hill of deep clay and limestone soil. It undergoes a slow, cold fermentation and spontaneous malolactic conversion, before being aged in stainless steel for 6 months on its lees. It is freshly bottled next spring. On the palate it is fresh and full of ripe peach and tropical fruit notes, and texturally soft and round. It's great with appetizers, baked white fishes, oysters, shrimp, or goat cheese.
